A quick introduction
Leeks have long and thick stalks composed of many layered leaves. The top of the plant is green but most of the stem is white. This is a result of planting the leeks deep in the ground, which 'blanches' the stem.

Trim off the base and the green upper parts of the leek (great to make stock with!). Make sure to wash thoroughly as dirt might be hiding between the layers. Leek can be used in various recipes: add it to stir fries, use it as a base layer in an Italian soffritto, make it the central ingredient in leek and potato soup, or caramelize it for quiches and omelettes.
