A quick introduction

Savory is a robust herb that adds fragrant and peppery notes to dishes. It could be confused with thyme but has tougher and pointier leaves.

Store in fridge in a closed container or hang to dry away from sunlight (once dried, store in a closed container).

Suggestions for preparation

Since it is a robust herb, savory does well in dishes that require longer preparation times. Add it to boiling water when cooking beans, rub it onto meats before roasting or grilling, or chop it up and mix it with other herbs to make a personalized herb mix. Use savory to spice up some green beans just by tossing them together with the addition of some butter, garlic and salt! We also like to add finely chopped savory to yogurt dressings with garlic, mint and olive oil.

Recipes

We recently discovered how tasty (and quick and easy to make!) pasta with a yogurt sauce is. There are numerous variations on this dish. We like this one but we add some additional savory and mint to the yogurt sauce. You can also experiment with adding extra ingredients such as New-Zealand spinach or other greens, roasted aubergine puree or pumpkin.
