Rosemary is an evergreen herb that is particularly popular in Mediterranean cuisine. It survives our milder winters.

Whole sprigs of rosemary can be added to stews, broths and soups (remove before serving). Other recipes call only for rosemary leaves, which are easily stripped from the stem by hand. Add rosemary to oven dishes such as roasted chicken, potatoes or vegetable traybakes. Cut it up finely and top baked goods such as focaccias and breads. You can also let rosemary infuse into butter and use it as a sauce for grilled meat or as a spread.
