A quick introduction
Thyme is a fragrant herb that is very popular in the Mediterranean region. The herb has very short, green/gray leaves which grow on woody stems.

Store in fridge in a closed container or hang to dry away from sunlight (once dried store in a closed container)

Whole sprigs of thyme can be used in stews, broths and soups (removed the sprigs before serving). Other recipes call for thyme leaves, which can be easily stripped by hand. Thyme pairs well with eggs, mushrooms, fish, beef and chicken. Thyme also works very well with legumes, roasted veggies, and potatoes. Thyme can also be used in desserts, for instance by infusing a syrup.
