A quick introduction

Nothing more satisfying than digging up potatoes! Which is why we usually try to schedule this for our summer 'working together day' with our CSA members. We mostly grow special varieties such as purple and pink ones because we don't have enough garden space to grow all-year-round-staple-potatoes for our members. This year we couldn’t get our hands on organic purple or pink potatoes and decided to grow the alouette variety instead. A tasty red variety with yellow flesh.

Storage

Potatoes store for a few weeks outside of the fridge, preferably in a dark and cool space.

Suggestions for preparation

Even though our potatoes might sometimes look very different (when we grow the purple or pink types) they can be used just like your regular potatoes. We do think that our varieties are best enjoyed in a simple way: cooked and served with some butter and salt. This way nothing distracts from the delicious potato flavour. Purple and pink potatoes also make for pretty spectacular purees and they're great roasted in the oven.
