A quick introduction
Baby garlic is basically immature garlic that is planted in spring instead of fall and that doesn't fully form a bulb and resembles a spring onion. Instead of forming several cloves, baby garlic often only makes one big clove (saves you some time peeling!). The tops are bright green, and the bottom is white or white with purple speckles. Baby garlic is a bit milder than mature garlic.
Storage
Store in the vegetable drawer of fridge.
Season

Suggestions for preparation
Use baby garlic in the same way you would use other alliums, like leeks, spring onions or scallions. The greens are edible and delicious as well! Chop it all up and use as a flavour base in a sauce, as a fresh note to any salad dressing, or just as a garnish to finish any dish you like!
