A quick introduction
We recently discovered that the tops of the fava bean plant are edible and taste very much like (surprise)...fava beans! We think they taste best when cooked but they can also we enjoyed raw.
Storage
Wash in cold water and store in the fridge, preferably in a closed container.

May to June
Suggestions for preparation
Fava tops can be quickly sautéed as a side dish, turned into pesto or used in a risotto. They can also be eaten raw.
